White Sauce Vegetable Pasta -an easy peasy pasta dish that’s simple, flavorful and incredibly hearty.

What is a white sauce?
White sauce is a flavorful sauce that is made with a combination of all-purpose flour( Maida), butter, and milk There nothing tastier than a freshly homemade white sauce.It can be prepared at home easily, and nothing beats a fresh homemade sauce.

White sauce is so versatile.You can add this white sauce to your regular red sauce pasta for an amazing pasta dish. Here is my Creamy Penne pasta with vegetables for instance or you can add paneer with some herbs for some delicious white sauce paneer recipe.

 My kids love pasta just like any other kid of their age, but they are picky to eat vegetables. In this recipe, as the vegetables are coated with white sauce along with pasta, they really didn’t care about picking the veggies and keep them aside as they always do, but instead, they ate all of them. White sauce vegetable pasta is a great recipe for those who want veggies added to their pasta.The entire family will LOVE this One-Pot vegetable pasta in white sauce.
The recipe is simple and easy and basically, it involves the following four steps.
1. Boil up some pasta
2. Sauteeing the veggies of your choice.
3. making the white sauce.
4. Mixing boiled pasta and veggies in the white sauce and tada you are done.
It’s easy, quick, and comforting in any kind of weather!
The veggies I added were Onions, garlic, zucchini, broccoli, olives, bell peppers and corn, but you can use any vegetable of your choice
The best part is a delicious one pot meal will be ready in just 30 minutes.
Here is how I made it

White sauce vegetable pasta

An easy peasy one pot vegetarian pasta recipe.

Ingredients

  • 1.5 cups Pasta

For white sauce

  • 2 tbsp butter
  • 1.5 tbsp all purpose flour or maida
  • 1 cup warm milk
  • salt to taste
  • 1/4 tsp Black pepper powder
  • 1/2 tsp Dried parsley leaves

For veggies

  • 1 small chopped onion
  • 2-3 garlic cloves
  • 1/2 Bell pepper ( any color)
  • 1 cup broccoli florets
  • 5-6 sliced olives
  • 2 tbsp boiled corn
  • 1/2 small zucchini
  • 1 tsp butter

Instructions

  1. Boil the pasta according to the instructions given on the packet.let it be Al Dante. Drain and save a 1/2 cup of pasta water.

  2. In a non stick pan, add a tbsp of butter and once the butter melts, add chopped garlic. Saute garlic for a minute

  3. Then add the chopped onions and saute for two minutes until they become soft.

  4. Now add the remaining veggies and saute for 3-4 minutes. Take the veggies out in a plate.

  5. In the same pan we will prepare the white sauce. 

  6. Heat 2 tbsp butter in the pan and keep the flame low. Once the butter begins to melt, add flour and keep stirring it so that no lumps are formed. A wire whisk is very helpful in this step.

  7. Start adding milk gradually and keep stirring the sauce. keep adding the milk and  keep stirring. You will see a silky white sauce forming in the pan, add salt and pepper and dry parsley leaves at this stage. if you think the sauce is thick you can add more milk.

  8. Once the sauce is formed, add the sauteed vegetables, pasta and mix well. add the pasta water and cook till everything mixes nicely and you get a smooth consistency for pasta.

  9. Garnish with some fresh or dry parsley leaves and serve hot!

Recipe notes-
1. You can add any veggies of your choice.
2. To make it more rich you can add some grated parmesan cheese or any other cheese that you like.
3, If you think that the sauce is too thick, you can add more milk to the sauce.

    Styling, Photography is super Swati! Something I really have to learn and constantly trying. The Pasta is absolutely delicious and I agree, the white sauce makes everyone forget the veggies. My husband is very fond of white sauce pasta and this is usually the choice of veggies that I use too, else he hates eating broccoli. Comforting and Filling thats what food in general should ideally be.
