White sauce vegetable pasta

An easy peasy one pot vegetarian pasta recipe.

Ingredients

  • 1.5 cups Pasta

For white sauce

  • 2 tbsp butter
  • 1.5 tbsp all purpose flour or maida
  • 1 cup warm milk
  • salt to taste
  • 1/4 tsp Black pepper powder
  • 1/2 tsp Dried parsley leaves

For veggies

  • 1 small chopped onion
  • 2-3 garlic cloves
  • 1/2 Bell pepper ( any color)
  • 1 cup broccoli florets
  • 5-6 sliced olives
  • 2 tbsp boiled corn
  • 1/2 small zucchini
  • 1 tsp butter

Instructions

  1. Boil the pasta according to the instructions given on the packet.let it be Al Dante. Drain and save a 1/2 cup of pasta water.

  2. In a non stick pan, add a tbsp of butter and once the butter melts, add chopped garlic. Saute garlic for a minute

  3. Then add the chopped onions and saute for two minutes until they become soft.

  4. Now add the remaining veggies and saute for 3-4 minutes. Take the veggies out in a plate.

  5. In the same pan we will prepare the white sauce. 

  6. Heat 2 tbsp butter in the pan and keep the flame low. Once the butter begins to melt, add flour and keep stirring it so that no lumps are formed. A wire whisk is very helpful in this step.

  7. Start adding milk gradually and keep stirring the sauce. keep adding the milk and  keep stirring. You will see a silky white sauce forming in the pan, add salt and pepper and dry parsley leaves at this stage. if you think the sauce is thick you can add more milk.

  8. Once the sauce is formed, add the sauteed vegetables, pasta and mix well. add the pasta water and cook till everything mixes nicely and you get a smooth consistency for pasta.

  9. Garnish with some fresh or dry parsley leaves and serve hot!
