INDIAN CHICKEN KEBABS

A kebab is a general term for small chunks of meat (most commonly lamb and beef, though any meat will do, as will fish, vegetables or fruit) threaded on skewers and barbecued, broiled or grilled. Kebab, (also kebap, kabob, or kabab) is a Middle Eastern, Eastern Mediterranean, and South Asian dish. Kebabs in India are more or less similar to most other kebab preparations along with their distinct taste, which can be credited to the use of Indian spices.

KEBAB and TIKKI FACTORY SPECIAL this Thursday. An impressive kebab/tikki selection this Thursday to fulfill your hunger and taste desires. Definitely its party time for weightwatchers and diabetic people.

Kebabs in India are more or less similar to most other kebab preparations along with their distinct taste, which can be credited to the use of Indian spices.
These Indian chicken Kebabs are drool worthy. Marinated in hung yogurt, roasted onion paste and some spices, they are heavenly in taste and healthy to eat.

INDIAN CHICKEN KEBABS

  • Servings: 4

INGREDIENTS:
Chicken-1/2 kg( Bone/boneless)
Cinnamon stick-
1 inch
cloves-5 to 6,
Coriander seeds- 2tbsp
green cardamom 6,
red onions-2
cashew nuts 4 to 5
Almonds 3 to 4
black peppercorns 8 to 9
hung yogurt- 1/2 cup
salt
1tsp black salt
Ghee( clarified butter)- 1tbsp

METHOD

  • Roast Cinnamon, Cloves, Coriander seeds, Cardamom seeds. Let it cool and then grind them to make a fine powder.
  • Roast the onions in the Oven for 30 to 40 minutes or on gas stove on low flame for 15 minutes. You can do this step before also.
  • Let the Onions cool. Peel off the skin from the roasted onions.
  • Make a paste of cashews and Almonds separately`.
  • Now grind together roasted onions, ginger garlic paste, Cashew almond paste, hung yogurt, black salt, crushed peppercorns,and spice masala together.
  • Slice the chicken pieces in a bowl, add prepared marinade and keep it in refrigerator for 30minutes.
  • Place them in Soaked skew sticks and brush with ghee on top. You can also cook them in a non stick Pan.
  • In an oven Preheated at 500 degree F or 250 degree C place the chicken skew sticks for 30 minutes or until they are ready.
  • Turn around the pieces once they are done from one side.
    Serve with Onion slices and Green coriander chutney.

FOOT NOTES

Cooking time and temperatures may vary according to different ovens.
Chicken is good for diabetic patients because of its low fat content. The method of preparing the chicken is also important. Fried chicken is not good for diabetics, especially the fast food variety. Eating a lot of fast food chicken resulted in a high calorie diet that can lead to an increase in weight which is not good for diabetics.

On the other hand, baked chicken is good for people with diabetes. Since baking does not involve the use of oil, the resulting dish is low in fats and calories. In general a 1 lb. dish can provide you with 5 servings with each serving providing you with about 120 calories. Barbecue chicken and grilled chicken is also good for diabetics as grilling is a low fat cooking method that does not add too many calories to the diet. Oven fried chicken is also good for diabetes patients but care must be taken to use as little oil as possible.
