MINTY TOFU AND VEGETABLES GRILLED SANDWICH

I love Sandwiches…filling, delicious, light and healthy. I can have them anytime…lunch, dinner, breakfast any time. I have been always fascinated to grilled sandwiches the ones which are made in grills or Panini makers. I ate grilled sandwiches for the first time in a mall in Noida at a CafĂ© coffee day outlet. It was a spinach and cheese grilled sandwich, and it was awesome.

Tofu as we all know is known for its extraordinary nutritional benefits, as well as its versatility. Tofu, also known as soya curd, is a soft cheese-like food made by curdling soya milk with a coagulant. For more benefits of Tofu check the foot notes.

A healthy, yet filling breakfast is very important to start a day and tofu is a great choice to have in breakfast.
Marinated in mint and coriander paste, tofu is first grilled and then put as a layer over cooked vegetables in making sandwiches.

Here is the recipe

MINTY TOFU AND VEGETABLES GRILLED SANDWICH

INGREDIENTS
Firm Tofu-200gms
Mint leaves- a handful
Coriander leaves- A handful
Green chili-1
Garlic clove-1 or 2( optional)
Sliced onions-1 small
Sliced Bell peppers-1 small
Sliced tomatoes- 1 medium
Salt and pepper to taste.
White or brown bread slices-8
Oil or butter- 1 tbsp.

METHOD
1. In a blender, coarsely grind mint leaves, coriander leaves, green chili and salt.
2. Cut Tofu into slices and then dry it with a clean kitchen towel.
3. Marinate tofu in mint-coriander paste for 10 minutes.
4. while tofu is marinating, take a non stick pan and heat half of the oil.
5. Add sliced onions, and sauté for some time and then add bell peppers and tomatoes.keep stirring the veggies and add some salt and pepper. Turn off the gas when the veggies get cooked.
6. Now spray some oil in a non stick pan or grill and place the marinated tofu slices on it.
Once tofu is grilled take it out in a plate.
7. To make sandwich , first turn on the grill or a non stick pan.
8. Spread some butter or oil on a slice of bread and then place it on the pan or grill.
9. First spread a layer of vegetables and then place grilled tofu over it.
10.Place another bread on it and grill it on roast it on the pan.
11. Serve it hot with ketchup or chutney and enjoy.
