Delhi wale choley is a new name given by me to matara or Vatana or dried white peas. In Delhi the street vendors sell choley kulche at various corners of the city. They name it Choley but actually they are not choley or chickpeas, instead they are Vatana/Matara/dried white peas.They go well with Paranthas or Kulchas.

I make these choley or matara often at home usually with Paranthas.This time I made them with Punjabi Stuffed Kulchas.

Here is the recipe
DELHI WALE CHOLEY

INGREDIENTS

Vatana or Matar or White dried peas- 1 cup
Chopped Onion- 1 small
Chopped toamtoes-1 small
Chopped green chillis- 1 or 2
chopped ginger- 1 tsp
chopped coriander- 2tbsp
Cumin powder-1tsp
Chaat masala-1tsp
garam masala-1tsp
salt- to taste
red chili powder-1tsp
Kala namak or black salt- 1 tsp
Lemon juice- few drops

METHOD

  • Soak the matara overnight or in warm water for 4 hours.
  • Boil them in morning keeping them little watery.
  • Once they are boiled , take them and let them cool.
  • Add all the spices, onions, tomatoes, ginger, chili, and coriander leaves in them.
  • Mix some lemon juice and serve them with Paratha or Kulchas.
