In a big bowl, keep the chicken pieces and rub the seasoning evenly all over. Drizzle olive oil and lemon juice on top and rub again. Let the chicken marinate for 10 minutes.
Grill the chicken for 5 minutes per side. Then allow the chicken to rest for at least five minutes before slicing.
Meanwhile, arrange all the vegetables on a serving plate.
Once all the chicken Pieces are cooked, slice the chicken into desired shapes.
Place the chicken pieces on the top of vegetables and pour the cilantro lime dressing all over. Serve immediately.
In a cup, mix together olive oil, salt, cilantro leaves and cumin powder.
Stir well and then pour this dressing on top of your salad and enjoy.
