OATS AND BEANS STUFFED BELL PEPPERS

Stuffed Peppers (Bharvan Mirch or Bharva Shimla Mirch) is one of several stuffed vegetable (Bharvan subji) dishes. Traditionally, the bell peppers are stuffed with potatoes, onions, seasoned with chili, turmeric, coriander, cilantro, salt and lemon juice. The peppers are then either browned in a Tava (frying pan) or baked in an oven until the peppers are soft. This is rather a modified and healthier version of Stuffed Shimla mirch.

My mother often used to make stuff capsicums filled with potato curry aand we use to love it . I also make stuff potato bell pepper , but this time I tried a healthier version of stuffing. I used Oats, beans and corn in the stuffing and then added our desi spices to enhance the flavors. No I am not saying that they are better than original potato ones but yes definitely they are more healthier. It’s actually a complete meal ..you just need a soup or some drink and that’s it..This has vegetables, grain and protein..it’s a complete dinner. You can exchange the oats with boiled rice, white or brown, or Quinoa or barley or even bulgur wheat ( Daliya).

OATS AND BEANS STUFFED BELL PEPPER

INGREDIENTS

Red or green big bell peppers- 3 or 4
Boiled black beans- 1/2 cup
Boiled oats ( use packet directions)- 1 cup
Boiled corn- 1/2 cup
Chopped coriander leaves-1/2 cup
Chopped green chili- 1 or 2
Garlic cloves- 1 or 2
Cumin powder- 1 and 1/2 tsp.
Lime juice- 2 tsp
Chaat masala- 1 tsp
Black salt- 1/2 tsp.
Garam masala- 1/2 tsp
Grated cheese ( optional)
Olive oil-1 tbsp.

METHOD

  • Pre heat the oven at 375 degree F or 175 degree C. You can also make it in a non stick pan.
  • Wash and cut the bell pepper in such a way that it becomes empty from inside. Rub some oil in the outer part of the bell peppers.
  • In a big bowl mix Oats, beans, corn , chilies, coriander leaves and all the spices. You can also add chopped tomatoes or onions or little bit of garlic.

  • Fill the bell peppers with the stuffing and pour some drops of olive oil. you can also add grated cheese to the mixture as I did ( for kids). Now keep them on a greased baking sheet and place in oven for about 30 minutes.
  • Garnish with cilantro( coriander leaves) and serve .
