Spinach Tortilla Veggie Bites

A very refreshing and delicious appetizer which my family loves and they are so easy and quick to make. A great snack option to serve as starters if you are having a get together or party at home.

When She asked us to wear our aprons and cook for the super Bowl collective post, I was thinking to make some thing which is easy and quick so that even moms can enjoy the night watching the match and not spending the entire time in cooking.

I have learned this recipe from my friend Laxmi who always bring new recipes whenever we have potlucks. Once in a month we all friends decide to meet and then everyone brings different dishes. It is just like a huge buffet free of cost and we always end up eating so much. Since all the friends are from different regions,I always get to learn few new recipes every time.

Yeah that’s true and I know this might happen with every food blogger, where ever we go or read our eyes search for props and recipes. There is so much to learn and I think there is no end to it. Recipes can be created from recipes and so on. You can make different variations of this recipe too by adding veggies of your choice and even using different tortillas. You can also add boiled chicken or meat if you want to and you can also add the filling in making sandwiches. If you can’t find tortillas, you can make this recipe using rotis or chappatis too.

Spinach Tortilla Veggie Bites

Makes 18 bites

 

INGREDIENTS

Spinach (Big )Tortillas- 3
Shredded Cabbage- 1 cup
Chopped Celery- 1 stick
Chopped red bell pepper-1/2 cup
chopped Black olives- 6
Cream cheese- 4 oz
salt a pinch
red chili powder- 1/2 tsp

METHOD
1. Take the cream cheese out of the refrigerator and let it come to room temperature.
2. In a big bowl mix cream cheese, salt,chili powder,cabbage, bell pepper, celery and olives.
3. Take one tortilla and spread this mixture on one side of the tortilla. First fold the tortilla slightly from left and right sides and then start folding it from bottom.
4. Once the entire tortilla is folded, seal the ends using more mixture. Similarly fold all the three tortillas. let them rest for 10 minutes in fridge and then cut them into equal sized bites.
5. Serve chilled and enjoy with a cup of tea or coffee. A perfect snack for a party and a great lunch box option too.

FOOTNOTES
1. you can add any vegetables or chicken in this recipe. Make sure when you add salt, you don’t add much as tortillas also have salt in them.

2. you ca keep this filling and use it as a spread in making sandwiches too.
