SOY AND SPINACH ROTINI

Rotini or Spiral Pasta is my favorite Pasta because the twisted shape allows the pasta to hold more sauce and is great in pasta salads or sauce dishes! I keep trying different recipes of Pasta as my kids love it. Today I made Soy and Spinach Pasta a trial in order to feed my kids something healthy . Soy is loaded with proteins and Spinach with iron and fiber. Adding this combination of ingredients indeed made my pasta more healthier.

I make Pasta once every week specially for my son’s lunch box with a promise that he will eat all the vegetables I add in it. Today while opening a new box of Rotini Pasta I looked at the pic on the box. It was displaying beef, spinach, tomato Pasta. I immediately replicated the pic into a vegetarian version using Soy nuggets instead of meat and using a combination of my own sauces and spices.

When we were kids my mother used to called Soy nuggets as Vegetarian meat when she cooked soy nuggets curry. I also tell my kids the same, when usually I am out of chicken or on the day we don’t eat non veg.
The overall recipe was healthy and my son finished all the healthy ingredients in his lunch box , which was a great satisfaction.

SOY AND SPINACH ROTINI

INGREDIENTS
Rotini or Spiral Pasta- 2 cups
Roughly chopped Spinach leaves- 1 cup
Tomatoes Chopped- 1 cup
Onion chopped-1 cup
minced garlic-1tsp.
Soy nuggets- 1 cup soaked
Olive oil- 1 tbsp.
Salt- to taste
Pepper- to taste
Soy sauce-1sp.
Tomato ketchup-1 tsp.

METHOD

1.Cook the Pasta according to the packet instructions. Soak Soy nuggets in hot water for 10 minutes. Squeeze out the excess water and keep the nuggets aside.
2.In a Wok or non stick Pan heat the oil and add minced garlic.
3.Then add onions and sauté for few minutes and then add tomatoes. Once the tomatoes get cooked, add sauces, and spinach . Sauté for few minutes until spinach leaves shrink and get cooked.
4.Add Soy nuggets to the Pan and sprinkle little water over them so that they get tossed with the sauces.

5.Finally add Pasta to the mixture and give this mixture a stir. Add salt and pepper according to your taste and serve.

NOTES
You may also use Pasta sauce if you want.Also you may decrease or increase the amount of the above mentioned sauces according to your taste and choice.
Cook pasta a little less than the time given in the packet.
