Eggless Spice Banana Cake

A delicious ,Eggless and easy banana cake flavored with spices.
When Christmas is just three days ahead, baking a cake becomes mandatory. I baked this cake just in time and I am happy mom as my kids are loving this.

Today morning when my little one woke, he came to me and said “Mumma its almost Christmas and I want to eat cake today” . I said “sweetheart sure! I will make it by the time you will come back from school” With a satisfied smile, he went back and left me in a confusion. I don’t bake cakes honestly, not because I don’t like cakes, but because When I do, I am the only one who ends up eating the most of it which obviously means adding lots of calories and of course my little one loves cakes too. My husband and elder son, they are occasional cake eaters.


With Christmas only 3 days ahead, I found one more reason to bake the cake as Christmas is special. I love adding fruits to make cakes as adding fruits adds the nutritional value to a cake and makes cakes more delicious. This time I decided to add bananas to the cake as they were getting ripened plus my little one loves banana cakes.

This Banana cake is purely egg free and I have used sweetened condensed milk to sweeten the cake. This is a very simple and easy recipe and a delicious egg less cake is ready in no time. If you want , you can add nuts or chocolate chips to the cake as well. I baked the cake in a 8 inch square cake pan and I baked 2 cakes in two separate pans. If you want to make one cake, just reduce the quantity of everything to half.

Ingredients
  1. 2 square cake pans 8 inch each
  2. 4 cups All Purpose flour or Maida
  3. 4 Over ripe Bananas mashed
  4. 1 tin or 400g Sweet Condensed Milk
  5. 1 cup yogurt or dahi
  6. 1/2 cup Plain Milk ( room temperature)
  7. 1 tsp cinnamon powder
  8. 1/2 tsp nutmeg powder
  9. 1/2 tsp cloves ground
  10. 8 tbsp unsalted butter ( at room temperature)
  11. a pinch of salt
  12. 1tsp Baking soda
  13. 1tsp baking powder
  14. 1 tsp icing sugar for dusting the cake
Instructions
  1. Preheat the Oven to 350 F or 180 C. Grease and dust the cake pans and keep them aside.
  2. In a big mixing bowl, mix together room temperature butter and condensed milk. You can whisk it using a fork or a hand mixer or a stand mixer.Now add the yogurt also.
  3. Once the mixture is completely mixed, keep it aside. In another bowl, sieve together maida or flour, baking soda, baking powder and salt. Sieve two times.
  4. Once sieved, mix well and then slowly mix the dry mixture to the wet mixture.
  5. Add the flour mixture gradually to the wet mixture. This means first add1/3 of the flour mixture and then mix .Then add another 1/3 mixture and then mix it and then add the remaining last portion to the wet mixture.
  6. Mix everything using a hand mixer or an electric mixer and then add the mashed bananas. if you feel that the batter is too dry, then add the milk slowly until you have reached the right cake consistency.
  7. Now add the spices and mix well. If you want to add the nuts, add them now.
  8. Pour the batter into the dusted cake pans and tap the pan so the batter spreads evenly.
  9. Bake the cake for about 30 minutes and then check it with a skew stick or a fork.
  10. Insert the stick into the cake and if it comes out clean then the caked is done.
  11. Take out the cake and let it cool down on a cooing rack. Once cooled, cut the cake into desired shapes . Dust the cake slices with some icing sugar and cinnamon powder and serve.
  12. Enjoy!
Notes
  1. To make this cake, i used square pans, but you can also use round pans or a bread loaf pan too.
  2. Make sure to sieve the flour two times so that we can incorporate more air to the flour . This way, the cake will be more fluffy and spongy as we are not adding eggs to the cake.
  3. You can also add nuts to the cake if you want.
  4. Even oven has a different setting and the baking time may vary, so please keep checking the cake in between so that burning can be avoided.
