CARROT, ONION AND CELERY SOUP

IMG_7003Nothing beats the winter chill like a steaming bowl of soup. I love to have soups specially in winters. This soup is a very delicious and healthy one for weight watchers too. It has carrots, celery and onions making it a very healthy soup. I also added some Potatoes and noodles to the soup just to attract my kids. You can add any other vegetable of your choice like bell peppers, mushrooms etc.

  • Add the broth, potatoes, and any quicker-cooking vegetables (such as asparagus and peas). Let the soup come to a boil, then reduce the heat to low and gently simmer, uncovered, until the potatoes can be easily pierced with a fork, about 15 to 25 minutes. Now add noodles and cook for a minute more. Taste and season with additional salt and pepper as needed. Garnish with Cilantro and serve.
