Tofu Mushroom Matar

Tofu, or bean curd, is a popular food derived from soya. It is made by curdling fresh soya milk, pressing it into a solid block and then cooling it . Tofu is a good source of protein and contains all eight essential amino acids.Mushrooms are my favorite and I love them so much that I always include them in my food menu. I add them in omelettes, soups, curries, pizza, stir fries , sandwiches and many more.

Few years back we went to my cousin’s house for dinner and there she had prepare this awesome mushroom peas curry which I loved a lot. I asked her the recipe and she was kind to share it with me. So its basically my sister Ritika’s recipe which I have modified by adding few more ingredients like tofu and some spices.I love this curry curry with some fresh chappatis , but you can also enjoy it with rice or quinoa or fill it in a sandwich.

Many people do not prefer to eat meat, so for them mushrooms and Tofu both are an excellent choice for protein , Iron and fiber. Some people believe that since mushrooms are basically a fungi, so it would be unhealthy to eat it. But no, that is not true, Mushrooms are an edible fungi and those who may not know , mushroom are widely used in medicines because they have a lot of health benefits. so friends , come out of myths and start involving them in your diet. They are simply Amazing!!

Ingredients
  1. 400 gms firm Tofu ( House foods)
  2. 2 cups white button mushrooms
  3. 1 red bell pepper sliced
  4. 1 cup boiled green peas ( fresh or frozen)
  5. 1 tbsp +1tbsp ginger garlic paste
  6. 1 big onion thinly sliced
  7. 2 tomatoes chopped
  8. 1/2tsp +1/2 tsp red chili powder( more or less depending on personal choice)
  9. salt to taste
  10. turmeric powder-1/2 tsp
  11. 1 tbsp + 2 tsp oil(for cooking tofu)
  12. cilantro leaves for garnish
Instructions
  1. Take fresh white mushrooms and wash them thoroughly.
  2. Open the tofu from its packing and drain the water. wash it once and then pat it dry with a paper towel.
  3. Cut the tofu into cubes of equal size and pour the mixture of ginger garlic paste, salt and red chili powder. Mix them gently and let the tofu marinate for about 10 minutes.
  4. After 10 minutes, spray or brush some oil on a non stick pan and place the tofu cubes in the hot oil. Press the tofu cubes gently so that the water squeezes out.
  5. cook the tofu cubes on both the sides till they are brown in color. once done, take them out in a plate.
  6. In a deep bottomed wok or Kadai, heat the remaining oil. Once the oil is hot, add onions and stir fry them till they are golden brown in color.
  7. Now add ginger garlic paste and cook till the raw smell fades away.
  8. Now add the bell peppers and mushrooms and give all of this a quick stir. Add salt and red chili powder and stir again.
  9. keeping the flame on medium, cover the kadai with lid. let the mushrooms cook for 8-10 minutes.
  10. Then open the lid and add diced tomatoes and mix well again. Let the curry cook for another10 minutes on low flame and then open the lid. Add boiled green peas and Tofu and give everything a gentle stir.
  11. if you think that the curry is too dry sprinkle some water all over.
  12. Cook for another 5 minutes and then turn off the flame. Garnish with fresh coriander or cilantro leaves and enjoy the yummy curry with Chappatis or bread or rice .

  2. TOFU-Tofu is an excellent food from a nutritional and health perspective.Tofu is a good source of protein and contains all eight essential amino acids. It is also an excellent source of iron and calcium and the minerals manganese, selenium and phosphorous. In addition, tofu is a good source of magnesium, copper, zinc and vitamin B1.
