HOW TO MAKE CURRY LEAVES POWDER

Curry Powder Ingredients
Curry leaves – 1 cup
Oil – 1tsp
Chana Dal – 2 tbsp
Red Chillies – 2 to 3
Black pepper – 10
Rie seeds – 1/2 tsp
Jeera(cumin seeds) – 1 tsp
Methi seeds – 1/2 tsp
Heeng(asafoetida) – 1 pinch
Amchur(mango) powder – 1 tsp
Coriander powder-1tbsp
Coconut powder-1tbsp( optional)

Salt – 2 tsp

METHOD

  • Wash then dry fresh curry leaves and keep it in sun for couple of hours. Heat 1/2 tbsp oil in a frying pan(kadhai) and add in the curry leaves and fry till they turn crispy, take them out and keep on a plate.
  • Pour the remaining 1/2 tsp oil then put Rie seeds and Jeer. After Rie, Jeera are roasted add Methi seeds, Chana Dal and black pepper. Fry till Dal turns brown, turn off the gas and let the spices cool off.
  • Put red chillies, Amchur powder and salt in the fried spices and mix, now put these spices in a mixer to make a fine powder.
  • Fill Curry Powder in an air-tight container. Cook curry leaves with rice, Idli, Dosa , Uttapam and enjoy delicious food with a good fragrance for a month.

NOTES:
You can add spices of your choice. Also you may vary the amount of oil use according to your health choice.
