RESTAURANT STYLE TOMATO PANEER JALFAREZI!

Paneer Jalfarezi is a famous Indian dish that is served in many Indian Restaurant. Jalfarezi means adding lots of vegetables to a dish. There are vegetable Jalfarezi, Paneer jalfarezi and also Chicken jalfarezi. I recently had Chicken jalfarezi in a Pakistani Restaurant. Oh God it was damn delicious. Will try that and share it soon. Well Restaurant guys surely add lots of cream and butter to their dishes so I thought of trying the same recipe at home and bringing out same flavors without adding extra fat to it. That’s what my blog is about..healthy cooking!!

I used store bought tomato paste in my recipe today, but you can also make tomato paste at home. Here is the recipe for making tomato paste at home. I know it is a little time consuming to make tomato paste at home but just a single day to your kitchen can save you a lots of time, money and bring you satisfaction of using home made. I generally devote a full day in my kitchen in chopping vegetables, making purees and pastes, peeling garlic, and making weekly menu. Trust me folks it helps a lot. Very soon I will be out with my weekly menus too.

Here is the recipe
RESTAURANT STYLE PANEER JALFAREZI

INGREDIENTS

Paneer- 400gms
Tomato paste- 1 cup
Chopped beans-1/4 cup
Diced Carrots- 1/4 cup
peas and corn – 1/4 cup
sliced bell pepper-1/4 cup
Cumin powder- 1tsp.
turmeric powder-3/4tsp
coriander powder- 1tsp
Honey- 2 tsp
salt- to taste
Garam masala powder- 1 tsp
Bay leaves- 2
Olive oil- 1/2 tbsp.
water( according to your liking)

METHOD

  • Heat oil in a non stick pan and place the Paneer cubes in it. Let the cubes brown from both the sides.
  • Then take them out of the Pan and keep them on a paper towel so that all the excess oil drains out.
  • Mean while steam all the vegetables( except bell peppers) either on gas or on microwave. I usually steam my vegetables in a microwave idli stand.
  • Now in the pan and in same oil add bay leaves. Then add tomato paste and stir it for 5 minutes. Add all the spices, honey and add little water.
  • Once the water dries up and the mixture starts leaving oil, add bell peppers and cook for few minutes. Add the steamed vegetables and Paneer and little water. Give this a stir and cover the lid for 5 minutes.
  • Garnish with hung curd or cilantro leaves and Serve hot with rotis or paranthas.

    NOTES

    Instead of tomato paste you can use tomato puree, but in that case you need to add more oil to the recipe.
    You can increase or decrease the amount of vegetables in this recipe
    Also you can make various other recipes from this and pack for your kid’s lunch like Paneer kathi rolls, Paneer vegetable sandwich and add boiled rice to it and make Paneer biryani. I hope you like this recipe and will try it at your home too.
