Restaurant Style Pav Bhaji

Pav Bahji – Does it needs any introduction? A delicious blend of all vegetables cooked in tomato based gravy and served with soft bread called Pav, somewhat similar to dinner rolls.Do you make Pav bhaji at home and it doesn’t taste the same like Restaurant? How about if today, I share with you a recipe, that will make you happy every time you make Bhaji.

It took so many trials to finally conclude this recipe. This is a perfect recipe for Bhaji and it tastes just like the one served in restaurants.There is a little story behind so many trials. Once my husband visited Mumbai and he tasted Pav Bhaji there for the first time. He always remembered that taste, and whenever I used to madePav Bhaji, he never convinced with the taste. I tried so many recipes but never matched the taste he liked. Then I watched some random videos which showed Mumbai street vendors making pav bhaji. I made notes with what I had learned earlier and with these videos and then finally tried making Pav bhaji again.This time The Bhaji turned out really fantastic and my husband was happy about the taste, not only him, my kids loved the bhaji as well. What else can make a mother happy, to see her family enjoying the meals she prepares.

You can use the vegetables of your choice, but after so many trials, I realized that certain vegetables spoil the taste of bhaji. In my recipe, I have used Potatoes, Lauki or bottle gourd, Tomatoes, Cauliflower, Eggplant, carrots, and capsicum.You can add any vegetable of your choice. I have used ready made Pav Bhaji Masala in this recipe, but you can use a very delicious HOMEMADE PAV BHAJI MASALA RECIPE By my dear blogger friend SONAL GUPTA for making Pav bhaji. I am sure it would taste more delicious if we use her homemade masala.

Ingredients
  • 2 Potatoes diced
  • 1 cup diced carrots
  • 1 small eggplant diced
  • 1 small bell pepper diced
  • 1/2 cup diced Lauki or zucchini
  • 1 cup cut cauliflower florets
  • 1 cup chopped onions
  • 2 chopped green chiles
  • 1 cup chopped tomatoes
  • 2 tbsp ginger garlic paste
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp deghi mirch or paprika
  • 1 tbsp Pav Bhaji Masala
  • salt to taste
  • 1 tbsp Kasuri methi powder
  • 1tbsp raw mango powder
  • 1 tsp cumin seeds
  • 2 tbsp oil
  • butter as per your choice
  • chopped coriander or cilantro leaves to garnish
  • lemon juice
  • finely chopped onion to garnish
  • food color or beetroot juice ( optional)
  • Pav bread or Dinner rolls
Instructions
  1. In a pressure cooker add all the vegetables and then add little water. pressure cook the for one whistle till the vegetables become soft.
  2. in another heavy based pan or Kadhai, add the oil and once the oil is hot, add the cumin seeds.
  3. Now add the chopped onions and fry them till they turn light brown. add the ginger garlic paste and saute for 2 minutes.
  4. Add all the turmeric and saute, then add chopped tomatoes. add salt and Cover with lid and put on medium flame.cook till the tomatoes get soft.
  5. Now add the rest of the dry spices except the red chili powder, mix well and then add little water. Cover with lid again.Once the overall mixture begins to leave oil, add the cooked vegetables along with the water. let this bhaji cook on medium flame until the water dries up.
  6. Now comes the most important part, the mashing of vegetables.Take a potato masher and while the curry is cooking carefully mash all vegetables, the mashing is what makes it a real bhaji.
  7. Add chopped coriander leaves and butter and mix it well. Now add the lemon juice and food color. Keep mixing and mashing until you reach the desired consistency. Check the salt at this point and adjust.
  8. Once you reach this stage, cut your Pav bread into halves and spread butter on them. Heat a non-stick pan and once it is hot, keep the pav on them. Once the pav is brown take them out in a serving platter.
  9. In the same Pan, add 1 tsp butter, red chili powder and pour the bhaji. Turn off the flame. garnish with lemon juice chopped onions and serve with Pav.
  10. Enjoy those delicious restaurant style pav bhaji with some pickle, green chilies and feel happy.
 

NOTES
1. Adding Butter to make Pav Bhaji is optional. You can always limit the quantity as per your choice.
2.The taste of Bhaji depends a lot on the vegetable you choose. Select the vegetables which are easy to cook and mash.
3. If you want to be Gluten free, try eating Bhaji with dosas or moong cheelas or Gluten-free bread.
4. If you limit the quantity of butter then Bhaji is actually such a healthy way to eat a lot of vegetables.
