QUICK RABDI!

Rabdi is a north Indian dessert which is made by thickening milk. Traditionally it is made by continuously stirring milk and sugar on low flame till it is reduced to a thick paste which is called Rabdi. Some people eat Rabdi as it is, and some people enjoy it with Malpua or Gulabjamun. I just love Rabdi since my childhood.

The Traditional Rabdi is indeed very delicious and is worth spending two or three hours making it, but if you want to make it instantly , this modified version of making Rabi is also party stealer. Yesterday Some guests came home and I was so confused as to what to make for dessert. When I opened my Fridge , I found a can of condensed milk, and a tub of Ricotta cheese. Instantly an idea to make Rabdi came to my mind.

The result…yumm yumm yumm…the Guests as well as my family simply loved it..try it out friends…believe me it is so simple and quick to make.

QUICK RABDI

INGREDIENTS

1 tbsp Maida (All Purpose Flour)
2 tbsp chopped Pistachios (For Rabri)
Ricotta cheese or Crumbled Paneer- 1 cup
4 cups whole Milk
1/2 tin Sweetened Condensed Milk
few Kesar threads soaked in milk
rose water few drops

METHOD

1. Crumble paneer coarsely and keep aside. If you are using Ricotta cheese take out the desired quantity in a bowl and stir it slowly.
2. Make a paste of maida with 3 to 4 tbsp. water
3.Combine Sweetened Condensed Milk and the rest of milk and bring to a boil.
4. Add maida paste to milk stirring continuously. Reduce flame and cook for 5 minutes.
3. Add chopped Pistachios,Kesar, Cheese /Paneer and rose water and keep stirring this mixture till all the milk thickens. Remove from flame. Cool it in fridge and serve cold, Garnish with nuts too. Enjoy!!
