Chicken Seekh kebabs-It’s a mix of seasoned ground chicken sculpted around wooden or metal skewers to form a sausage shape. When the meat is cooked, the skewers are removed from the grill, the meat is allowed to cool slightly and then slid off the skewers. Sliced into rounds and stuck with toothpicks, seekh kebabs are the perfect appetizer to blow cocktail parties, or get-togethers or any other special occasion.

Seekh kebabs are part of the traditional Pakistani diet. They are most commonly loved by non vegetarian lovers all over the world. I made Chicken seekh kebabs using minced chicken breast making them more healthy and delicious. I also cooked them in Pan instead of grill. The kebabs were superb in taste and so quick to make.

1 lbs minced thick ground chicken breast
1 small finely chopped onion
1tbsp ginger garlic paste
½ cup finely chopped cilantro ( coriander leaves)
1 tbsp finely chopped green chili (optional)
1 tsp red chili flakes or chili powder (optional)
1 tsp salt
1 tsp. coriander seeds
7-8 black peppercorns
2-3 big cardamoms
4-5 cloves
1 inch cinnamon stick
1/2 tsp fennel seeds
2- small cardamoms
a pinch of nutmeg ( jaefal) powder

1. Slighty roast coriander seeds, peppercoens, cloves, caramoms,fennel seeds on a pan and grind them to make a fresh garama masala powder. Mix the spices, including the cornstarch and rice flour in a bowl.
2. Add chopped onions, ginger garlic paste, green chili, and cilantro to minced chicken and mix well.
3. Add dry ingredients to the minced chicken, mixing well with hands.
4. Add oil or melted butter, and mix further with hands.
5. Take a handful of the minced chicken mix, and using slightly oiled hands, wrap it around a greased skew stick. You can take small skew sticks or cut them into two halves if they are wooden. You can also slide out the kebabs from the sticks and then fry.
6. Cook kebabs on a slightly greased frying or grilling pan on medium heat for ~10-12 minutes, keep turning in between.
7. Serve them with a plate of green lettuce or Kale, Onion rings, raddish,lemon and Chutney if you want. Enjoy these quick, juicy and delicious kebabs which are ready to serve in no time.
