Mexican Grilled Chicken Salad

Mexican Grilled Chicken Salad is a Tex Mex themed Salad with Seasoned grilled chicken, Avocado, Onions, Lettuce, tomatoes and a delicious cilantro lime dressing.

Mexican Cuisine is our second favorite Cuisine after Indian Cuisine. The reason is, the flavors, spices, and ingredients used in Mexican food are so similar to Indian food.The best part I love about Mexican food is the use of a lot of fresh vegetables in almost all the recipes.I try making Mexican food quite often at home and every time I do, My kids love it.

This time I tried this delicious Mexican Grilled Chicken Salad with Cilantro lime dressing. I Serve this Salad with Chicken and Vegetable Quesadillas and we all loved this delicious Mexican Meal.

 This salad does not take much time to make, you just need to marinate and grill the chicken, assemble the salad and toss it in a dressing and if you grill the chicken and ahead of time it gets even easier!

You can make this Mexican Grilled Chicken Salad for Lunch or Dinner. Toss in some beans for that extra protein or add some tortilla Chips for extra crunch. This Tex-Mex grilled chicken salad in with cilantro lime dressing is the perfect way to enjoy the arrival of summer.

You can also ask your kids to make their own tortilla wrap with this Salad. My 4 year old loves to create his own wraps. He just picks up the lettuce, chicken, and cucumber, and makes his own wrap, and he feels so proud of it. Kids are so cute and sure pure!

Here is the recipe for this delicious Salad

Mexican Grilled Chicken Salad

Ingredients

For Grilled Chicken

  • 300 grams Thinly Sliced Chicken Breasts
  • 3-4 tbsp Taco seasoning, or any other Mexican seasoning
  • 1 tbsp Olive Oil
  • 1 tbsp lemon juice

Other Vegetables

  • 1 Bunch Romaine lettuce roughly chopped
  • 1 Avocado sliced
  • 1 Cucumber diced into thick pieces
  • 1 Tomato diced into thick pieces
  • 1 small Onion Sliced

For the Dressing

  • 1/4 Cup Olive Oil
  • 1/4 Cup Finely Chopped Cilantro/Coriander leaves
  • salt to taste
  • 2-3 Limes For juice
  • 1/2 tsp cumin powder optional

Instructions

  1. In a big bowl, keep the chicken pieces and rub the seasoning evenly all over. Drizzle olive oil and lemon juice on top and rub again. Let the chicken marinate for 10 minutes.

  2. Grill the chicken for 5 minutes per side. Then allow the chicken to rest for at least five minutes before slicing.

  3. Meanwhile, arrange all the vegetables on a serving plate. 

  4. Once all the chicken Pieces are cooked, slice the chicken into desired shapes.

  5. Place the chicken pieces on the top of vegetables and pour the cilantro lime dressing all over. Serve immediately.

To make dressing

  1. In a cup, mix together olive oil, salt, cilantro leaves and cumin powder.

  2. Stir well and then pour this dressing on top of your salad and enjoy.
