GARLIC MUSHROOM WITH GRAVY

I love Chinese food so much that I can eat it everyday. The best thing about Chinese cuisine is that they use lots and lots of veggies. I usually make stir fries, noodles, fried rice, Manchurian, chilli paneer and chilli chicken, and many more varieties. This was the first time I tried this garlic mushroom with gravy.It tasted too good, trust me friends. You can also have it as a soup skipping the corn flour part. I served them with vegetable fried rice today.

GARLIC MUSHROOM WITH GRAVY

INGREDIENTS

Button Mushrooms, cleaned and quartered- 250gms
Green Bell Pepper/Capsicum, cut into 1 inch squares- 1 small
Onion, diced into 1 inch squares- 1 large onion
Garlic (Around 8-10 large cloves), finely chopped
Green Chillies, finely chopped (Adjust as per taste)3 to 4
Ginger, peeled and finely chopped- 1 inch
Dark Soya Sauce – 1and 1/2 tbsp
Red Chilli garlic Sauce – 1 to 2 tbsp
Molasses – 1 tsp ( or you can use honey)
tomato sauce- 1 tsp
Vinegar- 1 tsp
Pepper powder- 1 tsp
1½ – 2 tbsp Corn Flour
Oil (Preferably toasted sesame oil) 2 tbsp
Salt to taste

METHOD

    • Dissolve corn flour in ½ cup of water and keep it aside until needed. Mix molasses and soy sauce and keep it aside too.

    • Heat oil in a pan to smoking hot and add finely chopped garlic and green chilies. Give it a quick stir for half a minute and add diced onions. Stir fry the onions on high heat for a minute till the edges get brown.
    • Add diced bell pepper along with finely chopped ginger and stir fry for a minute or two on high flame.
    • Add mushrooms along with soya sauce and molasses mix, red chili garlic sauce and tomato sauce and vinegar and stir fry for 2 minutes on high flame.

  • Next pour 4-5 cups of water and salt to taste. Reduce the heat to medium and let it cook for 6-7 minutes.
    Once the mushrooms are cooked through, add the corn flour dissolved in water little at a time while you continue to stir the gravy to avoid from forming lumps. Once all the corn starch is added, the gravy will start to thicken. Let it cook for 3-5 minutes on medium heat.
  • Add ground pepper and mix them well. Turn off the heat and let it rest for 5-10 minutes for all the flavors to blend well. Garnish with red chili flakes, spring onions and serve hot with veg fried rice or noodles. Enjoy!
