Food is the most integral part of our life and proper food choices and style of cooking can give a complete healthy make over to your life. We all love our families and it is always a good idea to celebrate special occasions with healthy and delicious food.

Muthiya ( chickpea dumplings) is a very popular steamed and fried Gujrati snack. “Muthi” means fist and the dish is named such because the dough mixture is shaped into cylindrical rolls using the fist.Traditionally, It is made up of chickpea flour, methi (fenugreek), salt, turmeric, chili powder, and an optional bonding agent/sweetener such as sugar and oil.The above ingredients are mixed in a bowl and then kneaded to make a dough. they are then steamed and cut into muthiyas these muthiyas are then deep fried.

I made a slightly different version of muthiyas and indeed a healthier one by steaming and then pan roasting them . I added Cilantro leaves along with methi ( fenugreek) and also little whole wheat flour to bind the mixture. Read the health benefits of this recipe in the foot notes.My family loved this entirely healthy breakfast, when I served these muthiyas alog with a very healthy ABC juice or Apple- Beet- carrot juice.

Dhaniya-Methi Muthiyas

Recommended Serving size- 4 Muthiyas per person

INGREDIENTS

TO MAKE DOUGH
Washed and chopped Methi or Fenugreek leaves- 1 cup
Washed and chopped Dhaniya leaves- 1cup
Besan or gram flour-4 tbsp
Whole Wheat flour-2 tbsp
Turmeric powder-1/4 tsp
Cumin powder-1/2 tsp
Anardana powder or Amchoor powder-1/2 tsp
Ginger green Chilli paste- 2 tbsp
Baking soda-1/4 tsp
Salt to taste
Water to knead dough
oil-1tsp

FOR TEMPERING
oil-1tsp
heeng or Asafoetida- a pinch
Sesame seeds-1tsp
Mustard seeds-1 tsp
Red chili powder-1/2 tsp

METHOD
1.In a big bowl, mix all the ingredients required to make dough except water.
2.Gradually add water and make a dough. You can grease your hands little bit so that the mixture doesn’t sticks to your hand.
3. Now divide the dough into 3 equal parts and roll each pat into a long cylinder or just like a sausage.
4. Steam each of them in a steamer for about 15-12 minutes. To check whether they are cooked or not insert a knife and if the knife comes out clean , that means the rolls are perfectly cooked.
5. Take these rolls out and allow them to cool completely. Then cut into equal side discs ( which are called muthiyas) of about half inch thickness.
6. For tempering, Take a non stick pan and put 1 tsp oil in it. Add Heeng, Musturd seeds and let them crackle. Now add sesame seeds and roast them for about a minute.
7. Once sesame seeds turn light brown in color, add red chili powder and mix well. Add the discs or muthiyas and mix everything well so that the spices coat these muthiyas. Serve them hot with green cilantro chutney and a healthy juice or tea and Enjoy this healthy meal with your family and friends.

BENEFITS OF BESAN

For those who want to avoid gluten completely, or want to lose weight too, besan flour would be best to have. Besan is known to have very low levels of glycemic in it, which is great for those who have high diabetes.
