Bhindi Do Pyaza| Okra Cooked with onions

Bhindi Do Pyaza is a delicious recipe my mother makes. Do pyaza means using lots of onions in the recipe. The unique flavor and texture of this curry come because of the onions added in two different steps. First in the beginning, and other in the last.
This is one of my favorite recipes. I love Okra since my childhood. My mother cooks it in different ways. My sons also love bhindi or Okra and often asks me to cook it.

Often people avoid cooking okra because they think that it becomes slimy when cooked. There are few tricks to avoid that slime while cooking Okra.
What should be done to avoid slime while cooking Okra?
Here are few tips for that
1. Make sure that you cut Okra right before you are cooking or if you want t0 plan ahead, make sure you freeze the cut Okra.
2. Cooking it at high heats helps eliminate a lot of slimes. Make sure the okra is completely dry before cooking it.
3.If you are cooking Okra, and still its slimy try adding few drops of vinegar or lemon juice. It reduces slime
4. Another tip to avoid slime is to soak the okra in vinegar and then pat dry it and cut it before cooking.

Okra has been my favorite vegetable since childhood. I am so blessed that after marriage, I got to know that my husband equally loves Okra and now both my kids. We are an Okra loving family. I generally cook Okra Indian style, but I want to try other recipes for Okra too. Apart from the taste Okra has some really good health benefits as well.

High in fiber
Okra is high in fiber. Eight medium-sized pods are estimated to contain 3 grams of fiber. This bulk fiber quality has several benefits. It helps digestion, cuts hunger cravings, and keeps those who eat it fuller for longer.
Okra is known to aid in the prevention of diabetes. It is rich in fiber that helps in the prevention of this disease.

Here is how I made Bhindi Do Pyaza

  • Wash and pat dry okra or bhindi and then cut it vertically into two or four parts depending on the thickness.
  • Put 1tbsp oil in a Wok(kadai) and stir fry okra till the color changes a little bit and it starts shrinking.
  • Take it out after 10 minutes in a plate. Now add the remaining oil in the kadai. Put methi seeds or you can use methi powder also and roast for a minute on low flame till they start crackling. Slice the onion thinly and put half of them in Kadai.
  • Add ginger paste and garlic and fry all the above ingredients till they turn golden.
  • Add Tomato paste into this mixture and cook for 3 minutes. Now put all the spices and cook till the mixture starts leaving oil.
  • Add Okra and then remaining onions on top. Cover the vegetable and cook till the Okra become tender. Keep stirring in between so that they don’t burn. Turn off the stove and transfer in Platter. Garnish with  Coriander leaves. Serve hot with Parantha or rotis and enjoy.

Ingredients

  • 500 g Okra /bhindi
  • 2 medium Sliced Onions
  • 1 tsp Ginger Chili Paste
  • 1 tsp Garlic paste
  • 3/4 cup Tomato Puree
  • 1/2 tsp Turmeric powder
  • 1 tsp Red Chili Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Methi or Fenugreek seeds
  • Salt to taste
  • 3 tbsp Oil
  • 1/2 tsp Coriander seeds
  • 1 tsp lemon juice

Instructions
