Baked Atta Papdi Chaat

Baked Papadi chaat is a healthier version of the original Papadi chaat by replacing whole with flour or Atta with all-purpose flour and baking instead of frying.

Baked Atta Papdi Chaat

Chaat is a term describing savory snacks, typically served at road-side tracks from stalls or food courts in India.With its origins in Uttar Pradesh, chaat has become immensely popular in the rest of South Asia. The chaat variants are all based on fried dough, with various other ingredients like potatoes, chickpeas, and yogurt with various Chutneys.

METHOD

  • In a bowl mix whole wheat flour, Semolina or sooji and oil. Add some salt and Baking powder and knead a semi-soft dough using warm water.

  • Keep the dough in the refrigerator for 1 hour. Then take out the dough and make chappatis out of them.

  • To give papdi a round shape cut them with a cookie cutter or a round steel bowl.

  • Preheat the oven at 325degree F.
  • Line a baking sheet with parchment paper and place the Papadis on it.
  • Bake for 17 to 18 minutes till Papdis are brown and crisp.

  • Let them cool till they become ready to eat.
  • For making chaat, In a serving plate crush 4 to 5 papdis.
  • Add chopped potatoes, Yogurt, chutneys, spices and sev.
  • Serve and enjoy chaat along with tea or dring of your choice.

Ingredients

For making papdi dough

  • 1 Cup Whole Wheat Flour
  • 1/4 Cup Semolina
  • 1/3 Cup Oil
  • 1 tsp Baking powder
  • salt to taste
  • warm water to knead the dough

For arranging Chaat

  • 1 Cup boiled and diced potatoes
  • 1 cup Yogurt
  • 1 tsp each Chaat Chutneys to taste
  • 1 tbsp thin sev
  • Red chili powder to taste
  • cumin powder to taste
  • pink salt or black salt to taste
  • regular salt to taste
  • Chopped coriander leaves

Instructions

  1. In a bowl mix whole wheat flour, Semolina or sooji and oil. Add some salt and Baking powder and knead a semi-soft dough using warm water.

  2. Preheat the oven to 325degree F.

    Keep the dough in the refrigerator for 1 hour. Then take out the dough and divide it into 6 equal portions. Roll a chappati or disc and cut papdis or small discs around 3 inches in diameter using a cookie cutter or a steel glass. using a fork make few holes in the papdi.

  3. Line a baking sheet with parchment paper and place the Papadis on it.

  4. Bake for 17 to 18 minutes till Papdis are brown and crisp.

  5. For making chaat, In a serving plate crush 4 to 5 papdis. then add boiled and diced potato , Yogurt, chutneys, spices, and sev. Garnish with coriander or cilantro leaves and serve.

Recipe Notes

  1. Make sure you use lukewarm water to knead the dough.
  2. if you think that dough is tight use more water to soften it.
  3. As these papdis are baked and made with whole wheat flour, the texture would be different than regular fried papdis, but they taste great.
  4. you can make a deep fried version also using the same recipe.

    I was planning to bake these today..I have prepared the dough and kept in fridge..but there is power cut…it has been hours .. please suggest.will it be alright if I wait n make ?
